This is a more classic version of banana bread versus the other one I have on my blog. Both are great! I got this version from the blog Live.Love.Eat.
Banana Bread
10T butter
2C mashed ripe bananas (4-5)
1/2C sour cream
2 large eggs
11/2tsp vanilla
2C flour
3/4C plus 2T sugar
1tsp baking soda
3/4tsp baking powder
1/2tsp salt
1C chopped walnuts, optional
Preheat oven to 350. Grease a 9x5pan. Puree the bananas, sour cream, eggs and vanilla. Combine the flour, sugar, baking soda, baking powder and salt in another bowl. Add the 10T butter to the banana mixture and mix on med-low for about 30seconds. Add the banana mixture to the flour mixture in three batches, scraping the sides of the bowl and mixing on medium speed between each addition. Fold in the nuts. Pour into loaf pan and bake for around 70minutes. Remove from the oven and cool for 10minutes before turning out onto wire rack to cool. May use a bundt pan and bake around 35-38minutes.
